The Coastal Soul: Frères Bernard Ecume de Wimereux with Wild Garlic
Named after the sea foam (l’écume) of the Wimereux seaside, this cheese is a tribute to the rugged beauty of Northern France. The Frères Bernard (Bernard Brothers) have taken their iconic, velvety soft-ripened cheese and elevated it with the addition of Ail des Ours—the prized wild garlic foraged from the local forests in spring.
What makes this cheese exceptional is the interplay of textures and flavors. The “Ecume” is naturally airy and light, salted with local sea salt. When combined with the finely chopped wild garlic, the cheese takes on a vibrant, savory profile that is far more refined and floral than standard garlic cheese.
