The Crottin is a masterpiece of French “terroir.” Traditionally crafted from the high-quality milk of Alpine goats, these small cylinders are a favorite among chefs and cheese lovers alike for their incredible versatility.
What makes the Crottin unique is its ripening journey. When “frais” (fresh), it is snowy white with a subtle citrus note. As it matures into a “demi-sec” or “sec” (dry) state, the rind develops a beautiful blue-grey mold, the paste becomes firm and crumbly, and the flavor intensifies into a rich, hazelnut finish.
