The Artisanal Spirit of the North
While Mimolette is a staple of the Hauts-de-France region, the Frères Bernard version is crafted with a level of care rarely found in industrial blocks. Produced at the Ferme du Vert, this cheese uses high-quality local cow’s milk, colored naturally with annatto (a seed from the achiote tree) to achieve its legendary sunset glow. At 3 months, the cheese is “Jeune” (young), meaning it has retained the moisture and freshness of the pasture.
