Tomme de Savoie Fermière – Authentic Alpine Heritage from Farmhouse Cellars
Discover the ancestral soul of mountain cheesemaking with Tomme de Savoie fermière, the iconic raw-milk cheese born in the high valleys of Savoie and Haute-Savoie. Bearing the prestigious fermière distinction, each wheel is produced entirely on a single family farm using fresh, warm milk collected exclusively from local mountain breeds—Tarine,Abondance, and Montbéliarde—grazed on wildflower alpine meadows.
Matured for several months on wooden boards in cool, humid ripening cellars, the cheese develops its distinctive croûte fleurie—a rustic, irregular grey rind naturally dusted with yellow and red mold flora. Beneath this textured crust rests an ivory-to-pale-straw paste, peppered with small, irregular eyes. The texture is delightfully semi-firm, supple, and melting on the palate.
